Role Overview:
We are looking for a skilled and passionate Executive Chef to take full ownership of our culinary operation. This is a pivotal leadership role responsible for overseeing all food production across our restaurant, weddings, banqueting, private events, and meetings. The successful candidate will be a confident people manager with a passion for fresh, seasonal food, a calm and professional demeanour, and a strong ability to drive performance through teamwork and operational excellence.
Key Responsibilities:
• Lead and inspire a professional kitchen brigade in delivering consistently high-quality, freshly prepared dishes across all areas of the hotel.
• Strive to make Bromley Court Hotel a venue of choice for food in the area.
• Oversee day-to-day kitchen operations, including restaurant service, private dining, and catering for our function spaces.
• Develop creative, seasonal menus that reflect our fresh food ethos while meeting the diverse needs of our guests.
• Manage kitchen financials, including achieving target Food Gross Profit (GP) margins, controlling stock, waste, and supplier costs.
• Monitor and maintain the hotel's 5-star food hygiene rating, ensuring compliance with all food safety and health & safety legislation.
• Recruit, train, and lead the kitchen team, creating a culture of respect, teamwork, and continuous improvement.
• Work closely with the events and front-of-house teams to ensure smooth and efficient service delivery across functions and à la carte dining.
• Implement and monitor kitchen KPIs to drive operational performance, guest satisfaction, and team development.
Person Specification:
• Proven experience as an Executive Chef or Senior Head Chef in a hotel or high-volume event venue.
• Strong background in fresh food cooking, menu development, and managing banqueting functions.
• Demonstrated success in managing Food GP, stock control, and budget adherence.
• Knowledge and understanding of food hygiene standards, with experience in maintaining a 5-star hygiene rating.
• Effective people manager with experience leading large kitchen teams.
• Organised, level-headed, and able to remain calm under pressure.
• Strong interpersonal and communication skills; a team player who thrives in a collaborative environment.
• Flexible, hands-on, and committed to delivering excellence across every plate.
